Riquesito Queso Fundido with D'Sabor Chorizo
Total Time: 30 Minutes | Serves: 10-12
1 tablespoon La Cena olive oil
16 oz. D’Sabor Mexican Chorizo, casings removed.
24 oz. Riquesito Cheese, shredded
24 flour tortillas or 12 ounces tortilla chips, for serving
3-1/2 cups of roasted salsa
Cook the chorizo in a skillet on a stove. Once well cooked, and slightly dark brown drain grease by taking a glass plate that is covered by paper towels and dump the hot Chorizo onto it.
Melt cheese by using a large cooking pot add oil, cheese and slowly mix in. Keep temperature low to low medium to avoid burning. As it begins to thicken add 1/8 cup at a time of water if too thick.
Stir constantly. Once you have a good liquid consistency, add salsa and chorizo.
Remove from heat and serve in a warm flour tortilla or dip into the cheese with chips.
